Next   Barbra's Italian Sun Pizza Dough Recipe  

           Ingredients:
1 Pkg. Active Dry Yeast 
               OR: 
2 Cakes Compressed Yeast
1/4 cup lukewarm water 
1 1/2 tsp. Sugar 
2 1/2 tsp. Salt 
1/2 cup of shortening 
6-7 cups of SIFTED  
   all purpose flour  
1 3/4 cup of boiling water 
Tomato sauce Marana  1 to 1 1/2 large ladles 

        OPTIONAL: 
Ground Corn Meal 
Extra flour 

    MAKES 2 THIN 
     PIZZA CRUSTS

Mozzarella Cheese,  Pepperoni, Mushrooms etc.

     Sprinkle the Yeast into the lukewarm water and let stand a few minuets, then stir with a fork until dissolved. IN a separate pot put the sugar, salt and shortening into the boiling water until dissolved. COOL that mix down to a lukewarm temperature and only then add in the yeast mix with half of the flour, mix thoroughly. Add in the remaining flour and divide into 2 loaves. Using oiled bowls cover and let them rise in a wind free area (either outside or inside)
in direct sunlight until doubled. Do not double rise the dough.
     Hand roll the dough into a pizza shape on a table and then transfer to a large pan that can be  (SPRINKLED WITH THE OPTIONAL GROUND CORN MEAL). Then using a large fork stab the dough @ 100 times (except for the outside 1 inch area of the pizza). Complete pizzas first using the marinara sauce then the cheese and then the toppings of your choice.  Bake in a preheated oven at 400-450 degrees until done (approximately 20-25 min.)  
     NOTE:
    Use real butter for the shortening and be sure to let it rise in a covered pan 
            PREFERABLY IN THE DIRECT
                          SUNLIGHT.
